Great to meet you Saturday Mik. As I said - great bacon. Tried it yesterday - and only problem - didn't cook enough - it just flew off the plate!!! We'll certainly be back for more. Next thing I'll be looking for is a real ham - to roast in the oven - like we get in Ireland. I've tried a few cuts I've bought here but haven't really hit on the right one. We always revert to roasting a Kassler at Christmas time which is really yummy - however there must be a secret ham source somewhere!!!!

The stuff you buy in Ireland for home cooking is basically pre-brined meat. The cut of meat is pretty simple - it is just the upper part of the hind leg. Thing is, you'll probably need to brine it yourself, and also use a curing agent to keep the colour decent; pure salt alone will end up with rank, greyish looking meat. I have never purchased (or even seen) curing salts here, but I've not looked hard to be honest. You might be able to get some pre-brined meat from your butcher, I'Ve never asked. Gepokelt or something like that is the word I think. Dunno, I avoid the Gerry lingo where possible.

Well I did buy a piece of "gepökeltes Schweinefleisch (vom Schinken) " last week in Kaufland as I had never seen it before here - just to try it out and to see if it compared - sadly not - very little flavour. Perhaps it hadn't been left in the brine long enough. However - I do think that maybe Mik might have the answer to this after our chat on Saturday???

Just had my first proper breakfast in ages and do have to say Mik's stuff is top notch, grade A, fantastic freakin bacon

! If you didn't try it - do so - you won't regret it! Thanks for this lovely-yummy bacon Mik! Will defo be back for more!

Hi Mik,
Thanks for the bacon it's going down a treat, but I'm not too sure how long it will last.
My sat morning breakfast just became a whole lot better. My first order was great and I'll be coming back for more soon.

Orders for December being processed, orders open for January now.Salisbury never got back in touch with their details so there is nothing i can do about it now Sorry!!!!!

Ok people just to set the record straight.The bacon i get is all fresh produce from Germany.The pigs are bred by the butcher himself and also slaughtered.I have no bacon imported from anywhere its all bred in Bavaria and then i slice it and pack it to customers specifications.

Orders for January are now closed so its order now for a delivery in February.Just a word of advice i forgot to mention that i now have another car so anyone picking up should look for a silver Ford Focus

Er... I sent a PM on 2nd of Jan, but so far have not got a reply... is Mik around?
I had just got back from UK with some black pudding & need the complimenting bacon.
Now if only I could source English style bangers...

If you've only just got back, why didn't you bring some with you, that's what I did. Planning, that's what you need!
